Gulai Ikan Tongkol / Spicy Curry Tuna - (Mff - Terengganu)

This dish is rattling apparently for the sake of Malaysian Food Fest Terengganu month. I'm glad that I did it :)


I commonly swallow tuna fish inwards Japanese restaurant. Typical sushi or sashimi. I never bargain amongst the fish on my ain before. Haha...

Until lately too then I realized Malaysia known tuna fish every bit ikan tongkol or ikan aya. Oh! They accept some other yell called ikan kayu too. Different country has unlike name. Whatever, I simply recognize it every bit Tuna. Easier.

At 1st, I don't intend to create this dish for Terengganu MFF at all. Until I saw a rattling overnice tuna fish at the fish stall, too I simply can't resist buying it. This fish is most 900grams, toll me S$4.50. Tuna fish has stronger fishy scent than other ordinary fish that I commonly buy, but this fish is quite economical. Usually wet marketplace selling at S$5.00 per kg :)




Gulai ikan tongkol agency curried tuna fish dish, cooked amongst buah belimbi. Usually eaten together amongst nasi dagang. I create both dish together of course. The dish doesn't toll much. But you lot require some assay to get together all the element too laid upwards it.


So, here's the ingredients..

Ingredient A
  • 900g Tuna Fish / Ikan Tongkol
  • 50g Tamarind Paste / Asam Paste
  • 800ml Water
Ingredient B
  • 2 tbsp Coriander Seeds / Biji Ketumbar
  • 1 tbsp Fennel Seeds / Jintan Manis
  • 100g Shallots
  • 2 cloves Garlic
  • 15g Dried Chilli
  • 25g Galangal / Lengkuas
  • 25g Ginger
Ingredient C
  • 200ml Coconut Milk
  • Salt to taste
  • 3 tbsp Palm Sugar / Gula Melaka, grated (adjust to suit your tastebud)
  • 4 Red Bird's Eye Chilli / Cili Padi Merah, lightly bruised
  • 4 Green Bird's Eye Chilli / Cili Padi Hijau, lightly bruised
  • 100g Buah Belimbi. But I replaced it amongst iii medium sized Tomatoes.
# Buah Belimbi (Belimbing Buluh) is the correct i to use. I couldn't teach it. So, I replaced it amongst tomatoes. If you lot could discovery buah belimbi, delight piece of work that instead of tomatoes.

NOTE :

1. I desire this dish to accept thicker sauce. So, I used 800ml H2O instead. Wendy used 1L water. This is upto individual. You could teach ahead too piece of work to a greater extent than H2O if you lot wants to a greater extent than sauce. Flexible.

2. If you lot accept asam gelugor, piece of work it. But if you lot don't, similar me, simply piece of work asam glue / tamarind paste. No employment for that. 

3. This is a fishy fish to me. So, I decided to increase the amount of galangal too ginger. Original was 20g each. Anyway, v grams each doesn't makes much different. So, don't worry most that.

4. When you lot grate your palm sugar, laid upwards more. Just incase you lot involve to a greater extent than to accommodate the taste.

5. It is ever proficient to laid upwards everything earlier you lot offset cooking. For full general spices, I ever proceed stock at home. They are essentials. It volition comes inwards handy.

The essential spices for curry - Shallots, Garlic, Ginger, Galangal, too dried chillies...



Method
(Stage 1) - Fish Preparation
  1. Clean the fish - Cut the fish into 1 inch thick slice. Keep the fish caput too. Rinse fish until no to a greater extent than bloody liquid from the fish.
  2. Rub asam glue inwards 800ml water, strained, discard pulp too seeds. Keep the water.
  3. Bring asam H2O to a boil. Add inwards fish too allow it simmer for 5mins. 
  4. Dish upwards fish from asam water, laid aside. Keep the fish broth. We involve them later. 
(Stage 2) - Spices Preparation
  1. Lightly toast coriander seed too fennel seed inwards a pan. Grind both together into fine powder.
  2. Grind shallots, garlic, ginger, galangal too dried chillies into paste.


(Stage 3) - Cooking
  1. In a wok, add together four tbsp cooking oil, add together inwards chilli glue too kid till fragrant. 
  2. Add inwards coriander seed too fennel seed pulverization mixture, kid until it looks glossy.
  3. Add inwards kokosnoot milk, choose to a boil.
  4. Add inwards fish broth too choose to a boil nether high heat.
  5. Season amongst tabular array salt too palm sugar, too allow it simmer for some other ii mins.
  6. Add inwards fish pieces too choose dorsum to boil.
  7. Add inwards bird's optic chillies too buah belimbi too plow off the heat. If you lot are using tomatoes, allow it boil for some other twenty seconds earlier you lot plow off the heat. 
  8. Dish up, serve amongst nasi dagang or champaign rice.

I dear it's spicy too sourish gustatory modality of the gravy. The color looks attractive too! Unlike those heavy kokosnoot milk curry, it will makes me feels jelak amongst simply a few mouthful. This i is unlike :)


As I mentioned, this spicy curry tuna dish best eaten amongst nasi dagang too pickled vegetables. The spicy too sour fish pairing amongst the chewy bouncy rice... Oh! Yumm !!! The sourish pickled vegetables is at that topographic point for a argue too. The sourness of the picked vegetable raises the appetite, piece it reduces the feeling of jelak-ness for both rice too fish. Perfect match!
